“An elegant Cabernet Sauvignon from a strong Yarra vintage”
100% Estate grown from our Dixon’s Creek vineyard. Selectively harvested for maximum whole berry retainment. 2 separate batches of Cabernet were vinified in open pot fermenters. Daily hand plunging was utilized for gentle structural and flavor development. One component was pressed early to retain fruit expression and vibrancy. The other component underwent extended maceration to build structure and length into the wine.
