We’ve dabbled in rosé in the past, playing around with a multitude of varieties (Nero, Nebbiolo, Barbera, etc.) – never really committing one way or another, despite being the most requested wine style for us to add to our repertoire (after Pet Nat of course).
After playing with some of our Polish Hill River Sangiovese – generally destined for Truffle Hound – we, at last, have become enamored! We’ve then backed it up with some Old Vine Grenache from the Riverland that we’ve admired from afar for many years, finally taking the plunge for rosé, then lifted with a bit of Adelaide Hills Pinot Gris that’s seen a lick of skin contact for that copper hue. In short, this is as Unico as a rosé can be – a blend of our 3 key regions, some beautiful vineyards, in our house style: fresh, vibrant and bone dry.
